Snickerdoodles

This is a very modest cookie – very easy to make. Cinnamon gives it interest, so beware because you could easily eat and eat at one sitting!

Snickerdoodles
1 cup soft shortening (part butter)
1 ½ cups sugar
2 eggs
2 ¾ cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
¼ teaspoon salt

Mix shortening, sugar and eggs thoroughly. Stir in the dry ingredients. Roll into balls the size of small walnuts. Roll in mixture of 2 tablespoons sugar and 2 teaspoons cinnamon. Place 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes in moderate hot oven – 400° – until lightly browned but still soft. Makes about 5 dozen cookies.
