Ecuadorian seafood

For such a tiny country, Ecuadorian cuisine is truly varied and colorful. Being from the capital city, I am obviously a mountain girl and accustomed to the highland food (a lot of corn, grains, legumes, potatoes, veggies…). Yet we are really blessed to be able to obtain all types of food easily.

Although I don’t often make it down to the beach, I really enjoy seafood. Typical plates are very attractive and tasty. This we proved when my oldest son, Jonathan, daugher Jamie and I went out for lunch. Jonathan ordered one of many yummy seafood soups, while Jamie opted for a mixed seafood ceviche. I, on the other hand, went for grilled shrimp… look at the size of those babies!
