Angie’s Absolutely Awesome Oatmeal Cookies

Ok, so you are saying, “What can be so great about the same old, same old oatmeal cookies?” Well… first give these a try and  then get back to me! What I can tell you is that amidst all the Christmas cookies baked year after year, this one has been voted the all-around favorite in our family.

This cookie came about pretty much the same way as my sewing/quilting. More or less followed the recipe (pattern) the first time and thereafter winged it. With time several ingredients were added that really seemed to hit the spot with family members, until I perfected what is now an actual “recipe.” What makes these cookies unbelievably good? Orange juice and coconut!

Angie’s Absolutely Awesome Oatmeal Cookies

½ cup brown sugar, firmly packed
½ cup granulated sugar
½ cup butter
1 egg
1 teaspooon vanilla
½ cup orange juice
grated orange rind from one orange
1 cup all-purpose flour
½ teaspoon soda
½ teaspoon baking powder
½ teaspoon salt
1 cup uncooked quick rolled oats
¾ cup coconut flakes
¾ cup raisins

Preheat oven to 350°. Cream butter with sugars. Add egg, vanilla, orange juice, and grated rind. Beat until smooth. Sift together and add flour, soda, baking powder and salt. When beaten smooth, add oats, coconut and raisins. Beat the mixture well. Drop cookies 2 inches apart on well-greased cookie sheet. Bake 8-10 minutes or until light brown. Makes about 3 dozen 2-inch cookies.
